225g castor sugar
1/2 cup cooking oil
225g grated carrot
2 eggs
259g self raising flour
Method
- Pre heat the oven to 190 degrees celcius
- Mix sugar, carrot, eggs and oil in a bowl
- Fold in the flour
- Pour mixture into an 8 inch loose bottomed cake tibake in the oven for 50 minutes
- Decorate with vanilla flavoured butter icing
